Brownie Balls are just like the cake pops you all know and love - just in a rich, chocolate form! These cake balls made with a simple brownie mix are so easy to make - just 4 ingredients in this recipe.

You guys are in for a treat today! And it's a recipe that was born out of a kitchen fail (those are usually some of my best ones).

A few weeks ago, my kids and I whipped up a batch of brownies. Just plain Jane store-bought mix, but I tried to use my old homemade hack to jazz them up.

FYI - that hack doesn't work for brownies. Ask me how I (now) know.

They were just - cakey. And I hate cakey brownies (apparently my family does too). So they sat on our counter for days untouched.

Well, you regular readers know how much I hate wasting food. So I got a little creative and made these beauties - and what do you know? They were gone in a couple of days! 😉

Brownie Balls are almost fudgey they are so decadent. They're kind of like the richest brownie you've ever had, but covered in chocolate. And they absolutely couldn't be easier to make - if you've already made your brownies, you really only need 3 other ingredients!

Let's take a look at the (super simple) recipe for Brownie Balls, shall we?

Once brownies are prepared and cooled, crumble half of the pan into a large bowl. Add most of the chocolate icing (about 12oz, give or take). Mixture should not be overly sticky but should bind together.

With your hands, take 2 tablespoons of brownie/icing mix and roll into a ball. Place on a cookie sheet lined with a silicone liner or parchment paper. Once all of the mixture is made into balls, chill in the refrigerator for 1-2 hours.

With a double boiler, melt chocolate and butter together until stirrable and glossy. (This is a great way to use up leftover chocolate candy; we used krispy chocolate, as you can see above - it gave it a great texture!)

Using two spoons, dip balls into chocolate to coat; place back on lined cookie sheet. Place back in the refrigerator for 1-2 hours to allow chocolate to set.

Such a great treat! These are wonderful year-round, whether they are chilled or a little warm. They're also a fun way to incorporate other flavors - mint, raspberry, or peanut butter flavors would be delicious in this.

Brownie Cake Pops

With just a few simple ingredients, you can make Brownie Cake Pops for your next party. These are delicious, with rich fudgy brownies and cream cheese in a chocolate coating.

  • Prepare brownies as directed on the package. Once cooled, crumble brownies into a large bowl.
  • Add the cream cheese and stir until blended with the crumbled brownies.
  • With your hands, take 2 tbsps of brownie mix and roll into a ball. Place on a cookie sheet lined with a silicone liner or parchment paper. Once all of the mixture is made into balls, add a lollipop stick ot each cake ball. Chill in the refrigerator for about an hour
  • Add chocolate chips and butter to a microwave-safe bowl. Microwave in 30-second increments until melted and glossy.
  • Dip cake pops in the melted chocolate and allow them to dry by sticking cake pop stick in a piece of styrofoam or garden foam.

Notes

  • It's really important that the cake balls are cold when you dip in the melted chocolate. Not only will this help keep them together as you dip, but it will help the chocolate harden on the cake ball really quickly.
  • If you'd rather have brownie balls (minus the lollipop stick), no problem! Just leave those sticks out and allow the dipped cake balls to dry on a piece of parchment paper or a silicone baking mat.
  • If you find the cake balls hard to roll (too sticky), pop the brownie mixture in the refrigerator for 20-30 minutes to firm up.
  • To freeze: Leave the lollipop stick out and don't dip in chocolate. Freeze the prepared cake balls in a gallon-sized freezer bag. When you're ready to serve, thaw them in the refrigerator, add the cake pop sticks, and dip in chocolate.
