🍓 Ingredients

For Brownies

  • strawberry cake mix - cake mix actually makes really amazing brownies! We'll just modify the other ingredients to make a rich, fudgy texture.
  • eggs - I prefer using large eggs for my brownies.
  • vegetable oil - I normally use butter with any boxed cake mix, but vegetable oil actually works much better in brownies. It gives the mixture that rich, gooey consistency.
  • strawberry preserves - This is going to give your strawberry brownies an extra dose of sweet strawberry! If you don't have it on hand, no problem omitting it.

For Strawberry Glaze

  • strawberry preserves - We're going to use those same preserves to give the glaze a strawberry flavor. Strawberry jelly or jam works just as well!
  • powdered sugar - Make sure not to use granulated sugar; it won't give the glaze that smooth finish.
  • milk - If you don't have milk for some reason, water will work too - it just won't be as thick and rich.

Additions & Substitutions

  • Use any cake mix flavor you'd like! This recipe works really well as lemon brownies, banana brownies, or even a simple blondie made with yellow cake mix.
  • Add an extra dose of sweetness by mixing 1 cup of white chocolate chips into the brownie batter before baking. You could even add dark chocolate chips for that legendary chocolate/strawberry combo we all love.
  • Top your brownies with sliced fresh strawberries just before serving. These are also delicious with a sprinkle of freeze-dried strawberries over the top - they add a little crunch!

👨‍🍳 How to Make Strawberry Brownies

Step 1: Blend ingredients for brownie batter.

In a large bowl, blend cake mix, vegetable oil, and eggs. Spread the mixture in an 8x8" dish prepared with cooking spray.

Step 2: Bake in the oven.

Bake at 350 degrees for 20-25 minutes, until top starts to brown.

Step 3: Drizzle with strawberry glaze.

While the brownies cool, blend the milk, powdered sugar, and strawberry preserves. Drizzle this mixture over the brownies as they cool.

Pop the brownies in the fridge and allow the glaze to set for about an hour.

  • Baking dish options: these can be made in an 8x8" or 7x11" glass dish with similar results. For thinner brownies, bake in a 9x13" glass dish.
  • Don't overmix! Working the brownie batter too much will result in chewy brownies.
  • I recommend storing these in the fridge after baking. They're actually really delicious when they're cool! Enjoy them within 3-4 days of baking.
  • The brownie mixture will be thick, almost like cookie dough. It will bake beautifully though - just make sure it's spread evenly in the pan.
