⅓cupvegetable oil
2large eggs
For Strawberry Glaze
1cuppowdered sugar
⅓cupstrawberry preserves
2tablespoonmilk
Instructions
Preheat oven to 350 degrees.
Blend cake mix, oil, and eggs in a large mixing bowl. Pour batter into an 8x8" glass baking dish prepared with cooking spray.
Bake brownies at 350 degrees for 20-25 minutes, until top of the brownies starts to brown.
While brownies cool, whisk together powdered sugar, milk, and ⅓ cup strawberry preserves. Drizzle this glaze over cooling brownies.
Pop the brownies in the fridge and allow glaze to set for about an hour.
Notes
Baking dish options: these can be made in an 8x8" or 7x11" glass dish with similar results. For thinner brownies, bake in a 9x13" glass dish.
Don't overmix! Working the brownie batter too much will result in chewy brownies.
I recommend storing these in the fridge after baking. They're actually really delicious when they're cool! Enjoy them within 3-4 days of baking.
The brownie mixture will be thick, almost like cookie dough. It will bake beautifully though - just make sure it's spread evenly in the pan.
