Recipe – Peanut Butter Waffles with Jelly Syrup

I have a fun one for y'all today!

A week or so ago, I did breakfast for dinner one night. I wanted a fun aspect for Emma Ramey – and, after looking through the pantry to see what I had on hand, Peanut Butter and Jelly Waffles were born! These were delicious for both Emma Ramey and for us.

Ingredients

For waffles:
2 cups all-purpose flour
1 tablespoon baking powder
1/3 cup vegetable oil
Pinch of salt
1/2 cup milk
2 eggs
1/2 cup creamy peanut butter
1/2 cup applesauce

For syrup:
1/2 cup grape jelly
1/2 cup creamy peanut butter
2 tbsp. water

Directions

For waffles:
In a large bowl, mix together the salt, flour, and baking powder. Mix in vegetable oil, milk, and eggs until well blended.

In a smaller bowl, mix together peanut butter and applesauce. Add this mixture into the large bowl. Blend well.

Pour mixture into a waffle iron and bake until waffles are golden brawn.

For syrup:
Mix jelly, peanut butter, and water together in a small bowl until well incorporated (doesn't have to be perfectly mixed…it can be kind of lumpy). Microwave for 30 seconds – stir well. Microwave in 30 second increments until warm and well blended.

Enjoy!
