Breakfast Casserole

What a total coincidence...this is my FAVORITE breakfast recipe, and it came from my father-in-law - whose birthday is today! Happy birthday Mickey!

This is actually pretty easy...and is SO good!

Breakfast Casserole

You need...

1 package Hot Sausage (1 lb.)
2 cups Shredded Sharp Cheddar
12 slices bread
2 tbsp. Yellow Mustard
1 tbsp. Pepper
1 tbsp. Salt
10 eggs
3 cups Milk
1 can Rotel (drained well)


Brown and drain the sausage.

Mix the milk, eggs, half the cheese, and seasoning together. 

Cube the bread and layer in the bottom of a greased casserole dish.  Pour sausage over bread.  Pour Rotel next.  Then, pour egg mixture over all of it...shake dish around to make sure everything is laying evenly.

Bake at 400 degrees for 30 minutes.  Top with the rest of cheese, and bake for 10 more minutes, until cheese is melted and slightly brown.
