This is actually what I made Emma Ramey for her birthday breakfast. I might or might not have stood at the oven eating pancakes while I made them.
They are so good. SO insanely good. Of course this isn’t an everyday kind of breakfast, but this is so perfect for a holiday or a birthday treat. And you’re throwing in a few strawberries…that makes it sort of healthy, right? 😉
Here’s the recipe!
Strawberry Cake Mix Pancakes
For the pancakes:
1 box strawberry cake mix
1/2 cup all-purpose flour
1 teaspoon baking powder
2 cups milk
1/2 cup canola oil
10 strawberries, depending on size, chopped (You could even reserve a few to top finished pancakes.)
For the icing:
1 cup powdered sugar
1 tablespoon half and half
1 teaspoon vanilla extract
In a large bowl, mix together cake mix, flour, and baking powder with a fork. Add in eggs, milk, and oil; whisk well. Once well combined, fold in chopped strawberries.
Pour 5-6 inch pancakes on a hot griddle and cook 2-3 minutes on each side, until sides are starting to brown.
While pancakes are cooking, combine sugar, half and half, and vanilla until mixture is smooth.
Spread a spoonful of icing between each layer of pancakes to serve. Top with a generous portion of icing, whipped cream, sprinkles, and strawberries.
