  • Pineapple Juice: This gives you the liquid base needed for a smooth blend while adding that great tang. Use 100% pure juice with no added sugar.
  • Sweetened Condensed Milk: This is the secret to replicating that soft serve texture! Because pineapple has a high water content, it easily freezes into a rock-hard block. The sugar and fat in condensed milk lower the freezing point, giving you a scoopable texture instead of an icy one.
    • Dairy-Free/Vegan Option: To match Disney's dairy-free park version, swap this with an equal amount of sweetened condensed coconut milk.
  • Whole Milk (The Re-Spin Liquid): Do not freeze this! Keep it in the fridge until you are ready to spin. Adding a splash right before the "Re-Spin" function smooths out the Dole Whip and gives you that soft-serve texture.
    • Dairy-Free Option: Substitute this with unsweetened coconut milk (from the carton), oat milk, or extra pineapple juice.

How to Make Ninja Creami Dole Whip

  1. PREP THE PINEAPPLE BASE. Combine your frozen pineapple chunks, pineapple juice, and sweetened condensed milk directly inside your Ninja Creami pint container. Give it a good stir, press down any stubborn fruit chunks so the top freezes completely flat, and pop it into the freezer for 24 hours.
  2. RUN THE SORBET FUNCTION. When you're ready to serve, remove the lid and lock the pint into your machine. Blend using the "Sorbet" function. Don't panic if it looks a little powdery or crumbly after this first spin - that is totally normal for fruit bases!
  3. ADD MILK & RE-SPIN. Pour your splash of milk right over that crumbly pineapple mixture. Pop it back into the machine and hit the "Re-Spin" button. This magically transforms the base into a perfectly smooth, velvety copycat Disney soft serve. Serve immediately!

Leftovers & Storage

If you have leftovers, smooth out the top with your spoon, cover the pint container with the lid and freeze. To serve again, spin once on the sorbet function, add a good splash of milk, and spin again using the re-spin function.

I'd avoid refreezing more than once - it can lose its soft texture and the flavors may become diluted.

Leslie's Helpful Tips & Tricks

  • When freezing, make sure there are no pineapple chunks sticking out of the top of the ice cream base mixture. The top of the ice cream base needs to freeze flat to prevent damage to your machine. If needed, check it after an hour or two of freezing and push the pineapple chunks down into the slushy base.
  • If you'd like to swap out fruits, that's totally possible! Just use a canned fruit that's packed in juice, or frozen/fresh fruit with it's corresponding juice (kind of like I do with my mango sorbet). Peaches are also great in this recipe.
  • Like I mentioned, we batch prep out Ninja Creami pints (around 5-10 at a time). These extra pint containers are great for that! Just make sure to label your containers - I use a piece of tape labeled with a Sharpie.
  • Want your Dole Whip to look exactly like its served at Disney? Just put the finished Dole Whip in a piping bag to add to a large glass!

FAQs & Troubleshooting

If your Dole Whip looks dry, powdery, or crumbly after the first spin, don't panic! This is completely normal for fruit-based Creami recipes because they have high water content and less fat. Just add a tiny splash of milk or juice to the center of the pint, lock it back in, and run the "Re-Spin" function to instantly turn it into smooth soft serve.

Yes, you can use canned pineapple chunks, but frozen or fresh ripe pineapple works best for that big flavor punch. If you must use canned pineapple, choose chunks packed in 100% heavy syrup (not water) and drain the liquid completely before measuring to keep your fruit-to-liquid ratio perfect.

The Ninja Creami is a loud appliance, especially during the first 30 seconds when the blade hits that solid frozen block. If it sounds like it's struggling (think scary loud), your base might just be too cold. Run the outside of the pint container under hot tap water for 30 seconds to soften the edges before spinning.

Always use the "Sorbet" function for this recipe. Because pineapple is packed with natural water and sugar but has zero natural fat, the Sorbet setting spins at the exact speed and pressure needed to shave the frozen fruit block into a light soft serve rather than a solid ice block.
