They come out so tender and soak up the buffalo flavor much better than breasts. (But use chicken breasts if that's what you have - see comparison table below to adjust for different types of chicken.)
  • Hot Sauce: You'll need 1 cup of your favorite hot sauce. We're Louisiana hot sauce fans around here, but any brand works. Whether you like normal heat or extra spicy, this provides the base for that zesty kick we're after.
  • Dry Ranch Seasoning: This is my favorite ingredient here. It adds a great garlicy/oniony/herby flavor that balances out the heat without thinning out the sauce with extra liquid. If you use a big shaker of ranch dressing mix like I do, you'll use about 3 tablespoons in place of a packet.
  • Butter: We're using half a stick (¼ cup) to add richness. No need to melt first - just slice it into pats. It mellows out the vinegar in the hot sauce and gives the chicken a thicker sauce.
  • Cornstarch: We'll use just a couple of tablespoons at the end of the cooking process to thicken the sauce. This knocks out any watery chicken!

  • The Sauce: Not a fan of a lot of heat? Swap half of the hot sauce for chicken broth. You'll still get that signature buffalo tang, but it brings the heat index down to a much more kid-friendly level.

  1. Mix the Sauce. Add the hot sauce, ranch seasoning, and butter to the bottom of the Instant Pot and stir to combine. This helps the seasoning dissolve evenly and prevents clumps in the finished sauce.
  2. Add the Chicken. Place the chicken thighs in the sauce, turning them to coat both sides. The chicken will cook directly in the buffalo mixture, giving it plenty of flavor as it pressure cooks.
  3. Pressure Cook. Lock the lid and cook on High Pressure for 14 minutes. This slightly longer cook time works especially well for boneless, skinless chicken thighs, making them tender and easy to shred.

Leftovers of this chicken definitely need to be stored in an airtight container in the fridge. You've got some big flavors going on here that will seep into other foods if not stored properly! I like to store the chicken right in its sauce. Enjoy leftovers within 3-4 days of making this.

This is the perfect recipe to freeze! Cook chicken as directed, allow it to cool completely, and store in freezer bags. (Tip: make sure to freeze your chicken in bags on a flat surface so the frozen bags are easier to store and thaw.)
