Why You'll Love a Pineapple Cheese Ball

Ok - stick with me here.
I know that combining pineapple and bacon in a cheese ball sounds a little strange, but I'm telling you - this Pineapple Cheese Ball is going to be the hit of your next holiday party. It's such a great combo of salty and sweet (kind of like my Cranberry Chicken Salad, or this Strawberry Pretzel Dip).
There are just 6 ingredients, and most of the prep is as simple as mixing everything together. Shape it, chill, and add the pecan coating right before serving.

Ingredient Notes

(See recipe card at the bottom of this post for exact ingredient measurements.)
- Cream cheese: Use softened block cream cheese so everything mixes smoothly (about an hour on the counter usually does the trick). I would stick with full-fat cream cheese here because it gives the cheese ball the firmest texture.
- Crushed pineapple: This is the most important ingredient to prep correctly. Drain it really well. Press out as much liquid as you can so the cheese ball doesn't turn soft or watery.
- Diced pimento: Drain this well too. That little jar can carry more liquid than you think. A paper towel is your friend here - after draining, press it into the peppers to get off that extra liquid.
- Green bell pepper: Dice it finely so you get a little bit in each bite without big chunks of raw pepper. Aim for pieces that are about the same size as the diced pimento.
- Real bacon pieces: These add the salty, smoky flavor that keeps all of that pineapple from making the cheese ball taste too sweet.
- Pecans: Crush them fairly finely so they stick easily to the outside of the chilled cheese ball. They need to be chopped even if you're buying pre-chopped pecans.
Variations
- Make two smaller cheese balls: Divide the mixture in half before wrapping. This can be easier for larger parties because you can put one out and keep the other refrigerated.
- Leave out the bacon: You can omit it for a meat-free version, although the finished cheese ball will have a sweeter, milder flavor.
- Use red bell pepper: Swap the green pepper for red if that's what you have on hand.
- Add a little heat: A small amount of finely diced jalapeño can balance the sweetness if you want a spicier version.
The Secret to a Firm Pineapple Cheese Ball
Moisture is your biggest enemy here. With crushed pineapple plus the pimentos and fresh bell pepper, you don't want any extra liquid going into the cream cheese. Drain both the pineapple and pimento really thoroughly before mixing.
For the pineapple, I recommend pouring it into a fine-mesh strainer and pressing down gently with a spoon until very little juice comes out. And if the cream cheese mixture seems soft right after you combine it, don't panic. Wrap it up tightly and give the cream cheese plenty of time to chill before deciding something went wrong.
How to Make a Pineapple Cheese Ball

- Mix the filling. Add the softened cream cheese, drained pimentos, finely diced green bell pepper, bacon pieces, and very well-drained crushed pineapple to a large bowl. Mix with a rubber spatula until everything is evenly combined.

- Shape the cheese ball. Spoon the mixture onto a large piece of plastic wrap. Bring the plastic wrap up around the mixture and use it to shape everything into a ball.
- Chill. Refrigerate the wrapped cheese ball for at least 2 hours. You can leave it refrigerated longer if you're making it ahead.
- Coat with pecans. Just before serving, unwrap the chilled cheese ball and place on a plate. Gently press the pecans onto the outside of the cheese ball until evenly coated.
What to Serve with Pineapple Cheese Ball
I like a good thick cracker with a cheese ball because you're scooping something fairly thick. Ritz, Club crackers, Wheat Thins, pretzel crisps, pita crackers, and buttery round crackers all work great here. You can also serve it with apple slices, celery, or other crisp vegetables if you want something lighter alongside the crackers.

For another really easy cream cheese appetizer, my Cream Cheese Salsa Dip only uses two ingredients and takes about five minutes to mix together!
Make-Ahead Instructions
This one works perfectly as a make-ahead appetizer. Prep the cheese mixture, form it into a ball, and keep it tightly wrapped in the fridge. I would wait to add the pecans until close to serving so they stay crunchy instead of absorbing moisture from the cheese ball.
If you're making several appetizers for a holiday or party, getting this one out of the way the day before saves you work right before everyone arrives.
Leftovers & Storage
Storage: Keep leftover pineapple cheese ball tightly covered in the refrigerator. For best flavor and texture, enjoy it within about 3 to 4 days.
Note: Because this contains cream cheese and bacon, don't leave it sitting out all afternoon. You'll need to refrigerate this within 1-2 hours of taking it out of the fridge.
Freezing: I wouldn't freeze this one unless you absolutely need to. Cream cheese can become grainy after freezing and thawing, and with this much pineapple in the mixture, refrigeration is the better option for texture.

Leslie's Helpful Tips & Tricks
- Toast the pecans for extra flavor. A few minutes in a dry skillet brings out their nuttiness. Let them cool completely before adding them to the cheese ball.
- Don't overmix the filling. Once everything is evenly combined, stop mixing. Working softened cream cheese too much can make the mixture looser than you want.
- Chop the bell pepper by hand. A food processor can break it down too much and release extra moisture into the filling.
- Let it sit out for about 10 minutes before serving. It'll still be cold and firm, but the cream cheese will be a little easier to spread onto crackers.
