Ingredients

- 1 lb Sausage - I'm an Alabama girl, so of course I'm going to use Conecuh...but you can really use whatever you have on hand. Any linked sausage works!
- 2lbs red potatoes - Make sure to cut these into bite-sized pieces.
- 1 red onion - I just roughly chop my onion for this dish (maybe 5-6 chunks per onion).
- ¼ cup olive oil - If you prefer, you could use butter, vegetable oil, or coconut oil instead.
- 2 tablespoons Montreal Steak Seasoning - This seasoning really is the star of the show! It's going to give your potatoes & onions a flavorful, almost smokey feel.
Optional Veggies
This sheet pan meal is incredibly customizable - if you can roast it in the oven, you can add it to this sheet pan dinner! A few of my favorites...
- Broccoli
- Red or green bell peppers
- Cauliflower
- Carrots
- Mushrooms
- Peas
- Green beans
- Tomatoes
- Zucchini or yellow squash
If you add any extra veggies, aim for about a pound total to keep the cooking time and texture consistent. I'd also recommend adding an additional tablespoon of Montreal Steak Seasoning per pound of veggies you add.

How to Make Sheet Pan Sausage, Potatoes, & Onions
This might be one of the easiest recipes on my blog. It's as simple as chopping, tossing, and baking in the oven!

- Spread 1lb chopped sausage, 2lbs chopped potatoes, and 1 red onion evenly on a parchment-lined sheet pan. Drizzle generously with olive oil and sprinkle with 2 tablespoon Montreal Steak Seasoning. Toss everything together to coat well.
- Bake at 425°F for 35-40 minutes, tossing halfway through, until the sausage is sizzling and the vegetables are golden and tender.
More Helpful Tips & Tricks
- I used a half-sheet baking sheet pan to make this dish. Make sure that, no matter which sheet pan you use, everything is baked in a single layer to ensure it gets nice and crispy in the oven.
- Lining your sheet pan is a huge help when clean-up time rolls around! I love using a silicone baking mat to line my sheet pan. You can also use aluminum foil or parchment paper.
- If you wash any of your veggies, make sure to pat them dry with a paper towel before adding to the sheet pan. If veggies are wet, they don't brown as well in the oven.
- Store leftovers in an airtight container in the fridge and enjoy within 3-4 days; reheat in the air fryer or oven at 350°F for 5-6 minutes.
