Ingredients & Substitutions

- 2 lbs boneless, skinless chicken breasts - Be sure to cook and shred the chicken breasts before assembling the dish. For a shortcut, you can use the meat from one rotisserie chicken instead.
- 20 oz cream of chicken soup - This equates to 2 standard cans of soup. If you'd prefer, you can use any cream-based soup instead - it's great with cream of mushroom, too. Tip: If you can find the cream of mushroom soup with herbs, use it - it adds great flavor!
- 8 oz sour cream - Use light or regular sour cream, whichever you prefer.
- ½ cup melted butter - I use salted butter for this recipe. This is equal to about a stick of butter, melted.
- 1 sleeve Ritz crackers - The easiest way to use these in your recipe is to crush them while still in the sleeve, then open and pour on top of the casserole.
Casserole Additions
- Add veggies - this casserole is perfect with a few veggies added in! You can add frozen peas & carrots, broccoli florets, or even bell peppers to this before baking. I recommend adding about a cup of chopped or bite-sized veggies.
- Add poppy seeds - If you love the classic poppy seed casserole recipe, this is almost identical. Just add a tablespoon of poppy seeds to change it up!
How to Make Ritz Cracker Chicken Casserole




- Mix the 2lbs of shredded chicken, 2 cans of soup, and 8oz of sour cream in a large bowl, then spread into a greased 9x13" baking dish.
- Crush the sleeve of crackers in their sleeve and sprinkle over the casserole.
- Drizzle ½ cup of melted butter over the crackers.
- Bake at 350°F for 30-35 minutes, until the crackers are golden and the edges are bubbly.

LEFTOVERS: Leftovers should be stored (covered) in the refrigerator. It's best to enjoy this within 3-4 days of originally baking it.
REHEATING: Reheat single servings in the microwave for 30-45 seconds.
FREEZING: This is a great freezer-friendly casserole! Skip the crackers/butter and freeze the uncooked base of the casserole in an airtight container. When you're ready to serve, thaw it in the refrigerator, add crackers/butter, and bake as directed.

Could this recipe be a freezer meal, minus the crackers?
It definitely could! Yes, I would wait until you thaw to put the butter/crackers on top, but the rest should freeze with no problem.

I have lived out of my sorority house for 50 years, and I dont recall ever having this. Our house cook was famous for her cheese grits, and I made sure I didnt leave college without that recipe! I still make those grits to this day. The title of this dish intrigued me and I tried it tonight. It was really fast, easy and good! This will feed a crowd, for sure!
