Combine cut sausage, cut potatoes, and cut onion on a lined sheet pan. Drizzle with olive oil and seasoning. Toss well.

Notes
I used a half-sheet baking sheet pan to make this dish. Make sure that, no matter which sheet pan you use, everything is baked in a single layer to ensure it gets nice and crispy in the oven.
Lining your sheet pan is a huge help when clean-up time rolls around! I love using a silicone baking mat to line my sheet pan. You can also use aluminum foil or parchment paper.
If you wash any of your veggies, make sure to pat them dry with a paper towel before adding to the sheet pan. If veggies are wet, they don't brown as well in the oven.
This dish should be stored in an airtight container in the refrigerator. I recommend enjoying it within 3-4 days of cooking it.
When you're ready to reheat, pop a serving in the air fryer or an oven at about 350 degrees for 5-6 minutes.
