Ingredients
15.25ozboxed red velvet cake mix
½cupvegetable oil
2large eggs
8ozcream cheese
⅔cuppowdered sugar
Instructions
Preheat oven to 350 degrees.
In a large mixing bowl, use a hand mixer to blend cake mix, oil, and eggs. Spread this mixture in a glass baking dish sprayed with cooking spray.
Micowave cream cheese in a medium mixing bowl for 30 seconds. Stir, and keep microwaving in 30 second increments until cream cheese is stirrable. Stir in powdered sugar.
Pour this mixture over the top of the brownie batter. Gently swirl the cream cheese in with a butter knife.
Bake at 350 degrees for 20-25 minutes, until top starts to brown.
Allow brownies to cool for 30-60 minutes before serving.
Notes
Make sure to swirl the cream cheese all the way to the edge of the baking dish before baking.
Don't over-swirl the cream cheese - it will lose that pretty contrast if you over-mix.
These can be made in a 7x11" glass baking dish or an 8x8" glass baking dish with similar results. You an use a 9x13" pan, but you'll get thinner, crispier brownies.
