8ouncesCool Whip(thawed)
1packinstant vanilla pudding mix(3.4 ounces)
1cupcanned pumpkin puree
2teaspoonspumpkin pie spice
Instructions
Mix the pumpkin base. Add the pumpkin puree, dry instant vanilla pudding mix, and pumpkin pie spice to a large mixing bowl. Stir until smooth and evenly combined.
Fold in the Cool Whip. Add the thawed Cool Whip and gently fold it into the pumpkin mixture with a spatula. Mix just until evenly combined; avoid stirring too much so the dip stays light and fluffy.
Chill. Cover the bowl and refrigerate for 15β20 minutes. This gives the pudding time to thicken slightly and helps the flavors come together.
Serve. Spoon the pumpkin dip into a serving bowl and sprinkle with a little extra pumpkin pie spice, if desired. Serve chilled with gingersnaps, graham crackers, vanilla wafers, apple slices, pretzels, or your favorite dippers.
Notes
Use instant pudding mix. Don't prepare the pudding first; the dry mix goes directly into the pumpkin.
Use pumpkin puree, not pumpkin pie filling. Pie filling already contains added sugar and spices.
Thaw the Cool Whip completely. It will fold into the pumpkin mixture much more smoothly.
Don't over-mix. Gently folding in the Cool Whip helps keep the dip light and fluffy.
Don't use the whole can of pumpkin. Stick with 1 cup - the extra pumpkin can make the dip heavier instead of light and fluffy.
Make it ahead. The dip can be prepared a day in advance and kept covered in the refrigerator.
Storage: Keep leftovers in an airtight container in the refrigerator for 4β5 days.
Freezing: I don't recommend freezing this dip because it can lose its fluffy texture after thawing.
