For the Salad

(drained & oil reserved)

For the Dressing

reserved sun-dried tomato oil

red wine vinegar

Instructions
Once salad elements are chopped into bite-sized pieces, toss them together in a very large bowl.
In a jar with a lid, combine salad dressing elements (vinegar, oil, mustard, and spices). Shake well until combined.
Pour dressing over salad and toss well. Refrigerate at least 8 hours before serving.
Notes
LEFTOVERS:
Store covered in the fridge; lasts 4–5 days and gets better with time.
Swap beans for 16 oz cooked pasta for a
pasta salad version.
Chop everything into
bite-sized pieces
(especially onion + pepper).
