Ingredients
30ozcanned corn(drained very well and patted dry)
4ozcream cheese
⅔cupmayonnaise
1tablespoonchili powder
2teaspoonground cumin
1teaspoongarlic powder
1teaspoonpepper
2limes(juiced)
1cupgrated parmesan cheese(the canned kind)
¼red onion(finely chopped)
1cupfresh cilantro(finely chopped)
Instructions
Place drained corn kernels on a sheet pan in a single layer. Allow corn to roast in the oven or air fryer for 15-20 minutes at 400 degrees, until browned.
In a large bowl, blend cream cheese and mayonnaise with a hand mixer. Once blended, add spices, lime juice, and parmesan cheese; mix until blended.
Add cilantro (reserving a couple of tablespoons for garnish), red onion, and corn to the cream cheese mixture and fold ingredients in.
To serve cold: store this mixture in the refrigerator for 12-24 hours; serve garnished with cilantro.
To serve warm: bake this mixture in a cooking dish for 30 minutes at 350 degrees, until sides are bubbly and top starts to brown. Garnish with cilantro.
Notes
Dry the Corn Completely: Drain canned corn thoroughly and press dry between paper towels before roasting so it gets a nice char instead of steaming into a watery dip.
Make-Ahead Friendly: Mix up to 24 hours in advance and keep chilled in the fridge. The flavors blend together as it sits!
Cheese Swaps: Canned grated parmesan gives an easy salty bite, but crumbled Cotija or feta cheese are more traditional choices. Just make sure Cotija/feta is finely crumbled so big chunks don't overpower the dip.
Storage & Reheating: Refrigerate leftovers in an airtight container for up to 3–4 days. Reheat individual portions in the microwave in 30-second increments or warm in a 350°F oven for 10–15 minutes. Do not freeze.
