32ozfrozen Southern-style (diced) hash brown potatoes
1small onion(chopped)
4tablespoonsalted butter(melted)
10.5ozcanned cheddar cheese soup
12ozFrench onion dip
2teaspoonsalt
1teaspoonblack pepper
1teaspoongarlic powder
3cupsshredded cheddar cheese(divided)
Instructions
Combine the ingredients. Add the frozen diced hash browns, chopped onion, melted butter, cheddar cheese soup, French onion dip, salt, black pepper, garlic powder, and 2 cups of the shredded cheddar cheese to the slow cooker. Stir until well combined.
Cook on low. Cover and cook on low for 3–4 hours, stirring occasionally, until the potatoes are tender. They should no longer have a bite to them but should still hold their shape.
Add the final cheese. About 30 minutes before serving, sprinkle the remaining 1 cup shredded cheddar evenly over the potatoes. Replace the lid and let the cheese melt before serving.
Notes
Add the hash browns straight from the freezer; there’s no need to thaw them first.
Lightly grease the slow cooker insert before adding the ingredients to help prevent sticking.
For the smoothest melt, shred the cheddar from a block. Pre-shredded cheese will work, but it may not melt quite as smoothly.
Slow cookers can vary, so start checking the potatoes toward the earlier end of the cook-time range.
Let the potatoes sit for a few minutes before serving if the sauce looks a little thin. It will thicken slightly as it cools.
If your slow cooker creates a lot of condensation, carefully wipe moisture from the underside of the lid before serving.
For potlucks or holiday meals, cook the potatoes completely first, then switch the slow cooker to warm for serving.
