Ingredients
1lbground beef
12ozkielbasa(chopped into 1" rounds)
1medium onion(chopped)
2clovesgarlic(minced)
2teaspoonsalt
1packtaco seasoning
2.5ozbagged real bacon pieces
1lbnew potatoes(cut into bite-sized pieces)
10ozRotel diced tomatoes & green chilies
15.25ozcanned corn(drained)
15ozcanned chili beans
2cupsbeef broth
Instructions
In a large stock pot over medium heat, brown the ground beef and keilbasa. Add diced onion and cook for 3-4 minutes, until translucent. Drain grease.
Add garlic and cook until fragrant, about 30 seconds. Season mixture with taco seasoning and salt.
Add bacon, potatoes, Rotel, canned corn, chili beans, and beef broth to the stock pot. Stir well.
Simmer over medium/low heat for 30-40 minutes, until potatoes have softened and flavors have blended.
Serve topped with cheddar cheese, with cornbread on the side.

Prep the Potatoes Evenly: Chop your new potatoes into uniform bite-sized pieces (around 1 inch) so they all finish cooking at the exact same time. Leave any tiny ones whole.
