Add first 11 ingredients & 2 cups of water to the Instant Pot.

Set the Instant Pot for manual, high pressure, 30 minutes. Once the cook cycle is over, allow pressure to naturally release for 10-15 minutes before releasing remaining pressure.

Once pressure is released from cooker, stir soup well. Serve with cornbread on the side and top with cheese, chips, minced red onion, and sour cream.
