Cookie Butter Crinkle Cookies

This recipe for Cookie Butter Crinkle Cookies uses the popular Biscoff spread from Trader Joe's to make an easy dessert that's full of rich spice!

Ingredients

brown sugar flour baking powder cookie butter eggs vanilla extract salt ground ginger granulated white sugar powdered sugar

 In a large bowl, blend brown sugar, flour, salt, ginger, and baking powder with a fork. Use a mixer to blend in cookie butter, eggs, and vanilla extract until dough is smooth (dough will be thick).

Chill cookie dough for 1-2 hours.

Pour granulated sugar and powdered sugar into separate bowls. Roll cookie dough into 1" balls with your hands. Roll dough balls in granulated sugar first; then, roll in powdered sugar until well-covered. Place dough balls 2" apart on a silicone-lined cookie sheet.

Bake at 350 degrees for about 12 minutes, until tops of cookies start to show crinkle effect and bottoms of cookies are golden brown.
