Cake Mix Pancakes

You can make cake mix pancakes in so many different flavors! This post shows how to turn a boxed cake mix and simple ingredients into a delicious breakfast treat, complete with gooey icing syrup.

Strawberry Pancakes: strawberry cake mix (use any flavor you prefer) all-purpose flour baking powder eggs milk butter (melted) strawberries (chopped, optional) Icing Syrup: powdered sugar half and half vanilla extract Pancake Toppings: whipped cream sprinkles


Mix powdered sugar, half and half, and vanilla extract in a measuring cup. Stir until blended with no lumps.


 In a large bowl, mix together strawberry cake mix, flour, and baking powder with a fork. Add in eggs, milk, and butter; whisk well.


Pour 5-6 inch pools of pancake batter onto a hot griddle or skillet (sprayed with cooking spray) over medium heat. Sprinkle any add-ins (like strawberries) over the uncooked pancakes. Cook pancakes for 2-3 minutes on each side, until the batter starts to bubble and the cooked side starts to turn golden brown.


Drizzle pancakes with a generous portion of icing. Top with whipped cream and sprinkles.
