I think everyone's got a few of those recipes that they have memorized - this is one of mine. I've made these potatoes dozens of times, and they're always a hit!

🥔 Ingredients

There are just 7 simple ingredients...
- 3lbs red potatoes - I like to find the smaller kind that I can dice into 4-6 bite-sized pieces.
- 1 stick butter - We'll melt this in the microwave prior to using, so no need to soften to room temperature.
- 2 tablespoon sea salt - The kind with larger salt flakes adds extra crunch and enhances the texture.
- 1 tablespoon garlic powder - I prefer garlic powder over fresh garlic because it tends to coat the potatoes better, giving every last bite that garlic flavor punch.
- 2 tablespoons herb mixture - I use Herbs de Provence, but you can use any mix of dried herbs. I've used just rosemary before, you can also do thyme or oregano.
- 2 tablespoons black pepper - Fresh ground is always better if you have it.
- ½ cup canned parmesan cheese - Alright, I know canned is controversial, but trust me on this one. It gives the potatoes a yummy, crunchy crust and adds so much flavor.
Variations & Additions
Change up the flavors to fit your meal!
- You can skip the herbs and add 1 pack of taco seasoning to make these more Tex-Mex.
- Use 1 tablespoon Italian seasoning instead of an herb blend.
- Use cajun seasoning instead of other seasonings to give them some spice. I love Tony Chachere's for this.
- Change up the cheese - you could use cheddar, pepper jack, or mozzarella on these potatoes. You'll have less crunch with fresh cheese, but it does add a nice texture element and great flavor.
- You can also change the potato type if you'd like. Red potatoes are my preferred kind, but Yukon gold or baby potatoes work well too.
- You can make potato wedges with this same method - just cut your red potatoes into quarters instead of bite-sized pieces and add 3-5 minutes to the air frying time in the recipe.
- Trying to cut saturated fats? It's totally fine to use olive oil instead of butter.

👩🏻🍳 How to Make Air Fryer Red Potatoes




- DICE 3lbs of potatoes into bite-sized pieces and soak them in water while you prep the seasoning-this helps them crisp up!
- MAKE SEASONING BLEND. In a small bowl, combine 1 stick of melted butter, 2 tablespoon salt, 1 tablespoon garlic powder, 2 tablespoon Herbs de Provence, 2 tablespoon black pepper, and ½ cup grated parmesan cheese.
- SHAKE IT UP. Pat the potatoes dry, then add them to a large ziplock bag with the butter mixture. Seal and shake until evenly coated.
- AIR FRY TO GOLDEN PERFECTION. Spread the potatoes in a single layer in the air fryer basket. Cook at 425°F for 15-20 minutes, shaking the basket occasionally, until they're sizzling, crispy, and golden brown.
Oven Directions
These are also easy to make in the oven! Follow all directions up to the part when you add to the air fryer; place potatoes on a lined baking sheet and bake at 425 degrees for 20-25 minutes, tossing occasionally.

This side dish pairs well with just about anything! Try it with French Onion Soup Chicken and Instant Pot Black Eyed Peas for a delicious weeknight meal.

- Base for a breakfast bowl - just add your favorite breakfast ingredients (bacon, sausage, eggs) over the top.
- Tot-chos - Add melted cheese, sour cream, salsa, pico de gallo - all of your favorite nacho ingredients.
- Serve with a variety of dips & sauces for a "make your own side dish" kind of vibe.
🧊 Leftovers & Storage
STORAGE: I recommend keeping these in an airtight container in the fridge. Potatoes can easily take on the flavors of other foods in the refrigerator - you don't want that!
REHEATING: When you're ready to serve them again, set your air fryer to reheat mode and roast for 5-10 minutes.
FREEZING: These freeze well, making them a go-to side dish for busy days! Just cook as directed, cool, and place in a freezer bag. Freeze for up to 6 months. When you're ready to serve, thaw the potatoes in the refrigerator overnight. Pop them in the air fryer for 5-10 minutes to reheat and re-crisp.

- Add the towel-dried red potatoes and the butter mixture to a large ziplock bag. Shake the bag until the potatoes are totally coated in the mixture.
- Place in a single layer in the air fryer basket. Bake for 15-20 minutes, or until potatoes are sizzling and the outside is crispy and golden brown. Shake the air fryer basket occasionally to toss the potatoes.
Notes
- If you want crispy potatoes, it's really important that you get the potatoes as dry as possible after washing and dicing. Pat them dry with a paper towel before adding the butter mixture to get maximum crispness.
- Speaking of crispness - don't skip the soaking step! This will remove any extra starch from the potatoes so they can get as crisp as possible.
- These potatoes freeze wonderfully. I actually froze the batch you see in this post! Just put your cooked potatoes in a ziplock bag and freeze for up to 6 months. When you're ready to serve, you can either reheat them in the air fryer or the oven at around 300 degrees for 15-20 minutes.
- If you have an air fryer that supports 2 trays at a time, make sure to swap out the trays halfway through the cooking cycle to get all of your potatoes nice and crispy.

I'd recommend adding 4-6 minutes if you're going with 400 degrees (and just keep an eye on them during the cooking time).
