I think everyone's got a few of those recipes that they have memorized - this is one of mine. I've made these Air Fryer Red Potatoes dozens of times, and they're always a hit!

Seriously, you can use this recipe as a side dish for just about any meal. The flavors work well with hamburgers, roasted chicken, or even steak.
They're simple to make too - just load your ingredients in a ziplock bag and shake! You'll have the perfect side dish crisped to golden brown perfection in just minutes.

There are just 7 simple ingredients in this recipe...
- red potatoes - I like to find the smaller kind that I can dice into 4-6 bite-sized pieces.
- butter
- sea salt
- garlic powder
- herb mixture - I use Herbs de Provence, but you can use any mix of dried herbs. I've used just rosemary before, you can also do thyme or oregano.
- black pepper
- canned parmesan cheese - Alright, I know canned is controversial, but trust me on this one. It gives the potatoes a yummy, crunchy crust and adds so much flavor.
Variations & Additions
Change up the flavors to fit your meal!
- You can skip the herbs and add 1 pack of taco seasoning to make these more Tex-Mex.
- Use 1 tablespoon Italian seasoning instead of herbs.
- Use cajun seasoning to give them some spice. I love Tony Chachere's for this potato recipe.
- Change up the cheese - you could use cheddar, pepper jack, or mozzarella on these potatoes.
- You can also change the potato type if you'd like. Red potatoes are my preferred kind, but Yukon gold or baby potatoes work well too.
- You can make potato wedges with this same method - just cut your red potatoes into quarters instead of bite-sized pieces and add 3-5 minutes to the air frying time in the recipe.
- Trying to cut saturated fats? It's totally fine to use olive oil instead of butter.
How to Make Air Fryer Red Potatoes
Step 1: Prep potatoes.
Dice potatoes into bite-sized pieces and soak them in a bowl of water while you're preparing the seasoning. This will make them extra crispy!
Step 2: Make herbed butter sauce.
In a small bowl, mix together butter, salt, garlic powder, Herbs de Provence, black pepper, and parmesan cheese.
Step 3: Zip and shake.
Add the towel-dried red potatoes and the butter mixture to a large ziplock bag. Shake the bag until the potatoes are totally coated in the mixture.
Step 4: Air Fry.
Place in a single layer in the air fryer basket. Cook red potatoes for 15-20 minutes, or until potatoes are sizzling and the outside is crispy and golden brown. Shake the air fryer basket occasionally to toss the potatoes.
Oven Directions
These are also easy to make in the oven! Follow all directions up to the part when you add to the air fryer; place potatoes on a lined baking sheet and bake at 425 degrees for 15-20 minutes, tossing occasionally.
This side dish pairs well with French Onion Chicken Thighs and Instant Pot Black Eyed Peas for a delicious weeknight meal.
Leftovers & Storage
I recommend keeping these in an airtight container in the fridge. Potatoes can easily take on the flavors of other foods in the refrigerator - you don't want that!
When you're ready to serve them again, set your air fryer to reheat mode and roast for 5-10 minutes.
More Expert Tips & Tricks
- If you want crispy potatoes, it's really important that you get the potatoes as dry as possible after washing and soaking. Pat them dry with a paper towel before adding the butter mixture to get maximum crispness.
- Speaking of crispness - don't skip the soaking step! This will remove any extra starch from the potatoes so they can get as crisp as possible.
- These potatoes freeze wonderfully. I actually froze the batch you see in this post! Just put your cooked potatoes in a ziplock bag and freeze for up to 6 months. When you're ready to serve, you can either reheat them in the air fryer or the oven at around 300 degrees for 15-20 minutes.
- If you have an air fryer that supports 2 trays at a time (like this one), make sure to swap out the trays halfway through the cooking cycle to get all of your potatoes nice and crispy.
