Blueberry Pancake Cupcakes

Alright guys, can we have confession time for a minute?

I am so not a Pinterest mom. I just play one on the Internet. (I can hear the gasps through the computer screen. 😉 )

It is just not in my DNA-makeup to do creative things all day, every day with the kids. I really, really try to make it a goal think of at least one interactive thing to do with them each day, even if it's just 30 minutes of one-on-one playtime. But as far as having the perfect themed, activity-laden, no-down-time summer? Not happening around here. Sorry.

But, as it turns out, I am pretty good at coming up with kitchen activities for Emmie (and Jackson soon), whether it's making a craft recipe, bird food for our feeder, or a fun recipe that goes along with some of her favorite things. Emmie loves them and it's a great opportunity to teach her life skills and (hopefully) grow her love of being in the kitchen. Plus, I get a little help in food prep…haha!

So, every once in awhile, I try to think of a snack or recipe activity that goes with her favorite shows. She loves connecting her love of TV characters to interactive play! Recently, we made a fun recipe that's perfect for one of her favorite Disney Junior shows!

Right now, Disney Channel is premiering new episodes of your favorite Disney Junior shows every Friday morning. You can catch the newest episodes of your favorite Disney Junior shows from 6-10am every Friday morning on Disney Channel. On June 23rd (this Friday), the Fri-YAY feature on Disney Channel is Puppy Dog Pals – you can catch an all-new episode at 9am (eastern) on Disney that morning. We can't wait to see what adventures the pugs have – I hear it might just be underwater!

If you're celebrating the Fri-YAY premiere of Puppy Dog Pals like we will be, I have an awesome breakfast/dessert hybrid that any little Disney fan would love to snack on during the morning premiere – Blueberry Pancake Cupcakes. (You can even call them pupcakes for a little bit of extra Puppy Dog Pals fun!)

Blueberry Pancake Cupcakes || Easy Dessert Brunch Breakfast Idea || Fruity Muffins

Blueberry Pancake Cupcakes

For the cupcakes…

1 cup complete pancake baking mix

1/2 cup milk

2 eggs

1/4 cup salted butter, melted

1/3 cup sugar

1 tsp vanilla extract

1 cup blueberries

For the topping…

1 stick salted butter

3 cups powdered sugar

1/2 cup blueberries, coarsely blended

40 blueberries

1 cup of pancake mix, prepared as 1” pancakes

Directions:

Have your trusty helper mix together all cupcake ingredients except for blueberries. Give it one final mix yourself to ensure that there are no lumps.

Spoon mixture into a lined cupcake pan. Toss blueberries with a little bit of the extra pancake mix to ensure they won't sink to the bottom of your cupcakes. Place 4-5 in each cupcake, pressing them into the mixture.

Bake the cupcakes for 15-17 minutes at 350 degrees, until tops of cupcakes begin to brown. Cool well before frosting.

In the meantime, beat together ingredients for your icing well. Chill for 20-30 minutes before frosting. Mix a little bit of your pancake batter as directed on the box and prepare as 1” cupcakes for the topping.

Pipe frosting onto your cupcakes. Top with pancakes and blueberries to make a paw shape to celebrate the premiere of Puppy Dog Pals!
