Who doesn't love a good “dump and go” slow cooker recipe? You know the kind I'm talking about – throw a few ingredients in your slow cooker, and come back a few hours later to a home-cooked meal. These recipes are so incredibly easy, taste like they took hours to prepare (because, technically, the kind of did), and usually feed a huge crowd!
So I thought I'd share a new one with you today! The prep time is maybe 10 minutes, and you'll have a well-balanced, delicious dinner in a matter of hours.
Crock Pot Cheesy Chicken, Broccoli, and Rice
1 14oz bag frozen broccoli
1/2 medium onion, diced
1-2 cloves minced garlic (about 1/2 tablespoon pre-minced garlic)
1lb Boneless, Skinless Chicken (2-3 Chicken Breasts)
1 lb (about 2 1/2 cups) long-grain white rice (not quick-cooking rice)
1 carton (32oz) chicken broth
1 pack Campbell’s Cheesy Broccoli Chicken Oven Sauce
Salt and pepper to taste
1 1/2 cups cheddar cheese
Spray your slow cooker well with cooking spray.
Remove any extra fat and skin from chicken breasts and dice into 1″ pieces. Place chicken in the bottom of the Crock Pot.
Over chicken, pour frozen broccoli, diced onion, garlic, and uncooked rice. Add Campbell's Oven Sauce and chicken broth to the slow cooker. Mix well.
Cover and cook on high about 4 hours, until the rice absorbs most of the liquid. Stir contents of the Crockpot once an hour or so. When there is very little liquid left, turn the slow cooker to warming mode. About 15 minutes before serving, mix in half of the cheddar cheese and top with remaining half. Replace lid and let cheese melt until serving.
