Last week, I had one of the best recipes I think I've ever had on my eMeals list – Cheeseburger Mini Pizzas. It was incredibly easy and tasted great!
I had never had a mini pizza made with an English Muffin…guys, if you've never had it, give it a try. The muffin has the perfect little nooks and crannies for the sauce, the outside of it stays crispy and the inside is soft. So good!
I edited the recipe a little bit from what eMeals sent me. Here's the edited version. This would be perfect for a quick, weeknight meal.
Bacon Cheeseburger Mini Pizzas
1 pack (12 pieces) bacon
1/2 lb ground beef
1 teaspoon salt
1 teaspoon onion powder
1 8-count pack English Muffins
1/4 cup pizza sauce
1/4 cup ketchup
1/4 cup mustard
6-8 dill pickle spears, chopped, plus 2 tbsp juice from jar
2 cups shredded cheddar cheese
2-3 green onions
Preheat oven to 350 degrees. Split English muffins open and place cut side up on a baking sheet. Bake for about 5 minutes.
Meanwhile, brown bacon and ground beef in a large skillet; drain off fat. Season with onion powder and salt.
Mix together pizza sauce, ketchup, mustard, and pickle juice. Spoon enough of this mixture onto each toasted English muffin to coat. Top with bacon/beef mixture, cheese, chopped pickles, and green onions.
Bake 10-15 minutes, or until tops are starting to brown and cheese is melted.
I served ours with baby carrots…fries would be great too!
