Creamy Salsa

This homemade recipe for creamy salsa uses the fresh flavors of tomato, cilantro, and red onion and gives them a creamy element that balances out the spicy flavor! Works well as a pico de gallo too.

So I've been on a produce buying kick lately, and when I cleaned out my fridge yesterday, I realized I had a TON of it that was about to expire. Cheap me wasn't about to let that happen, so I made something that turned out really good!
I've always liked mixing salsa and sour cream together for a dip, so I kind of went off of that. First, I chopped up half a red onion into really small pieces…

…and added in 2 small tomatoes, again chopped into really small pieces. Get all of the guts out of the tomato first, or it will be too watery.

Then I took probably 1/4 cup of cilantro, and chopped it.

Get that all in a small bowl…
…and add a teaspoon of pepper, a tablespoon of hot sauce, a tablespoon of lime juice, a dash of salt, and red bell pepper flakes to taste (more or less depending on how spicy you want it). I also put in probably 2 tablespoons of olive oil.
Mix that all up, and it would probably be a really good salsa all on it's own!
BUT, I had some sour cream that was about to expire too, so I put that in (about a cup).
It would be an awesome dip for a cookout! We ate the whole bowl in about an hour. 🙂
