This one is a total "trust the process" kind of recipe - but, if you do, you're going to get a surprisingly delicious low-carb treat!
I first had these baked avocados years ago at a favorite local restaurant. I was determined to figure out the recipe. It ended up being really simple to make, with a 4-ingredient filling that works so well with the creaminess of the avocado.
Not only do these baked stuffed avocados have a fantastic savory flavor combo, but the texture combo is out-of-this-world. You'll have a crunchy cheese top, with a luscious filling and a fresh, savory element from the creamy baked avocado. This one is a total flavor party!

Variations & Additions
- By following this basic process for making stuffed avocados, you can change the flavor to suit your needs. Examples: use taco seasoning for a southwest-inspired dish or cajun seasoning for a creole flavor.
- Use any protein you'd like - ground beef, chicken, or sausage all work well in this recipe.
- Change up the cheese! Use pepper jack, Colby Jack, or parmesan cheese instead of cheddar.
- Add a sprinkle of panko breadcrumbs to the top of the filling to give your avocados a little crunch.
- Sprinkle red pepper flakes on top of the filling for some heat.

How to Ripen Avocados Quickly
Need to ripen an avocado quickly for this recipe? No problem!
Wrap your avocado in foil and place in a 200-degree oven for 15-20 minutes. Remove the avocado and allow it to cool completely before unwrapping the foil. Your avocado should be perfectly ripened (but might still be a little green on the outside).
How to Make Baked & Stuffed Avocados
Step 1: Prepare avocado halves.
Once the avocados are halved and pitted, use a spoon to hollow out a little bit more of the hole for the pit. Place the extra avocado flesh in a medium bowl and set aside.
Place pitted avocados cut-side up on a baking sheet or in a glass baking dish. Sprinkle liberally with lime juice, salt, and pepper.
Step 2: Prepare savory filling.
Into the extra avocado flesh, mix mayo, chili sauce, bacon, and cheese. Divide this mixture among the avocado halves.
Step 3: Bake avocados.
Bake avocados for 12-15 minutes at 425 degrees, until the filling is crispy on top and the avocado meat is just starting to get soft.
Leftovers & Storage
This is one recipe where I don't love saving leftovers. The leftover stuffed avocados just aren't as good after they're reheated. Try your best to use all of them at once!
If you do have leftovers, store them in an airtight container in the refrigerator. They can be enjoyed within 3-4 days of cooking. When you're ready to reheat your baked avocados, warm them in a 350-degree oven for 10-12 minutes.
More Expert Tips & Tricks
- You'll want an avocado that's in that "sweet spot" of ripeness for this recipe. You don't want it firm, but you also don't want it to be mushy. The avocado should give way just a little when you squeeze it. (The method I mentioned above gets an unripe avocado to this ripeness!)
- Make sure your oven is preheated when adding the avocados. This will ensure the top gets nice and crispy and your avocado doesn't overcook.
