First off, many of you may have noticed that the blog got a new look yesterday! I LOVED our Christmas one this year, but it was time to go. I'm hoping to keep this one around for awhile!
On to the recipe. This is a super duper easy one! I love Ambrosia during the holidays, but it seems like no one ever makes it outside of December. This is a recipe you can use for the rest of the year!
1 can Pineapple
1 can Tropical Fruit Mix
1/2 c Orange Pineapple Juice
1c Sweetened Coconut
Peel the tangerines (with a knife, not by hand...the leftover peel isn't great in the salad), and slice them into 1" pieces.
Add the cans of fruit and juice...mix and chill for 3 hours. Add the coconut at the end. I didn't have maraschino cherries, but they would be great in here too.
Told you...SO easy! And, I learned a fun trick a few weeks ago...freeze fruit salad in individual portions - then, when you need to pack a lunch, use this as your "ice pack." It will be thawed by lunch and the rest of your food will stay cool!
