I put a picture of this on twitter/instagram a couple of weeks ago, and had a couple of requests for a recipe - here it is!
This is probably our absolute favorite thing to make for breakfast. It definitely isn't an every day treat - but every once in awhile it is SO good.
Monkey French Toast
(serves 2)
Ingredients
1 ripe banana, sliced thin
2 tablespoon peanut butter
4 pieces of almost stale bread (Fresh bread doesn't work - trust me. White or wheat bread works - I can't tell the difference!)
2 eggs, beaten
¼c milk
1 teaspoon cinnamon
1 teaspoon nutmeg
a splash of whiskey (This can totally be left out.)
1 teaspoon vanilla extract
Directions
Make 2 peanut butter and bananas sandwiches with the bread, bananas, and peanut butter. One tablespoon of peanut butter and half of the banana on each one!
Combine the eggs, milk, cinnamon, nutmeg, whiskey, and vanilla in a wide dish (I use a corningware dish). Get a non-stick skillet warming over medium heat on the stove.
Put one sandwich in the egg mixture. Soak for about a minute and flip...soak for another minute. Grill this in the skillet, for 2-3 minutes per side (until each side is browned).
Slice each sandwich in half lengthwise and top with powdered sugar/syrup. Serve warm.
