Blogger's Block

I've got blogger's block something serious.

I just don't know what to write about!  Seriously - life is boring right now.  I had training for work this week for two days.  In the process of getting to said training, I put a BOLT (not a nail, a bolt) in the SIDE of my tire...please tell me how I managed that one.  So I spent more getting the new tire than I made on the training.  Nice.

But besides that, there isn't too much going on to report.  We do go to Nashville next week for Noah's job!

Your Friendly Monday Reminder...


Tuscaloosa still needs help!  This is how much of Tuscaloosa still looks, if it hasn't been cleared (there are just acres and acres of empty land now that used to be neighborhoods).

The part of this video that gets me the most is the lady's "We Are Coming Back" shirt.  There are signs like this all over Tuscaloosa, and they get me teary-eyed EVERY TIME I see one.

Happy Birthday...to ME!!

Today is my 26th birthday!

I've reached the point in life where it's no longer cool to get a year older...so I'll consider it a year wiser. :)

I'm going to lunch with some friends at a fun Mexican place, and Noah's taking me to one of my FAVORITE places in Tuscaloosa for dinner tonight...Kozy's!
It's going to be a great day!

Hattiesburg...Again!

Since all of Noah's family was still in Hattiesburg this past weekend, we decided at the last minute to go back for a couple of days!

We had a great time...Noah even stayed up until 5am with his brothers one night. :)  We did a little bit of shopping, a little bit of eating (like we normally do there), and got to see family that we don't get to see all together all that often!


Since Noah's parents won't see me before my birthday (on Friday), they got me a little birthday cake from my FAVORITE bakery there!  Our groom's cake from our wedding came from this same bakery.

Show Us Your Life - Favorite Side Dish Recipe

Warning:  This recipe is IN NO WAY healthy for you...but it sure is good!

This is one of my own creations, and it is SO good!

Loaded Baked Potato Casserole

You need...

3 bags Instant Mashed Potatoes (yes, instant)...the flavored ones work best
1 8oz. brick Cream Cheese
8 oz. Sour Cream
1 egg, beaten
8-10 slices Bacon, cut into 1" pieces
1/2 onion
1 pack (2 cups) Shredded Cheddar Cheese
1 tbsp. Salt
1 tbsp. Pepper
1 tbsp. Garlic Powder

Directions:

1.  Prepare the instant potatoes according to package directions.

2. Break the cream cheese down into small pieces (like teaspoon sized) and mix in with the potatoes until you can't see the cream cheese.

3. Mix in sour cream, half of the cheese, and the egg.  Set aside.

4. Meanwhile, cook the onion in a little bit of oil until translucent.  Add in the bacon and cook until desired "crunchiness." Drain.

5.  Mix all but maybe 2 slices of the bacon into the potato mixture.

6.  Pour the mixture into a greased 9x13" casserole dish.  Top with remaining cheese and bacon.

7. Bake at 350 degrees for 20-30 minutes.

Fourth of July Weekend

So Noah's birthday is the fourth of July, and we always go to Hattiesburg (his hometown) for the weekend of the fourth.  This year was no different!

Three major life events happened this weekend...

1 - Obviously, Noah turned 27.  Bad wife award goes to this one, who didn't get any pictures of him with his cake/presents. :(  

2 - We met our PRECIOUS niece Avery!  She was born in April, but our brother and sister-in-law live 10 hours away in Florida.  She's a doll!


3 - I fished.  Like REALLY fished, out in the ocean fished.  Noah's way into fishing, but I've never done it (besides just watching people).  We went on Sunday...and had to wake up at 4:30 to get there!

My father in law had a few pictures on his phone of us that I don't have yet...I'll show you proof of my actions at a later time. :)  But here's what we caught...


Yes, those things on the right are SHARKS.  Like they wrestled these things onto the boat.  I obviously hid like a small child every time they did.  (And I can't remember, but one of the little fish was one of mine!)

And this isn't a major occurrence, but I did find Ann Taylor Loft clothes for 90% off when we went shopping, and New York and Company clothes for 40% off.  I was kind of proud of myself. :)

All in all a good weekend!

Little bit of housekeeping...

For all of you who read my grocery deals every week...

I LOVE putting my deals on the blog, but I know it clutters up a lot of people's feeds and I want to kind of get back to just blogging about our lives.  So - I set up a grocery deals page this morning where I'm going to start putting all of our trips!  You can see it here.  I'll still update it every week, you'll just have to go there on Friday rather than seeing it on the main page.  I just updated it for this week!

I'll try to get a link to it on one of my sidebars this weekend! 

We're headed to Hattiesburg (Noah's birthday tradition) this weekend, so I'll come back with lots of pictures...we get to meet our niece this weekend!!! :)
