Friday Afternoon Update

I've been at my school most of the day.  Our schools are still out, but one of the most affected areas lost their elementary school (Alberta Elementary).  Their 3rd, 4th, and 5th grades are moving into our school, so we've been there today helping them and fielding donations that are coming in.

We also have been calling all of our families in the damage path to see how they are.  I am so proud to report that ALL of my children and parents are alive!!  I have two that lost their home, but homes can be replaced.  I am so, so thankful that my babies were protected.

I haven't written a lot about what I've seen on here, just because some of it is too graphic.  I honestly haven't taken a lot of pictures either.  I don't feel that this is a tourist spot, and I wouldn't want people taking pictures of my home if it was in shambles, so I just haven't.  If you want to see pictures or videos, there are thousands out there...just google it.  I have gotten a couple of pictures of just areas or personal things.

This is 15th street, about an hour after.  This was the first time I had seen it, since it was too early for pictures at that point.  If you know the area, this is where you come out from Midtown on 15th street.  You used to not be able to even see past this road it was so populated.  And now you can see all the way to DCH, probably half a mile away.  This is probably the biggest intersection in Tuscaloosa.

I pass this area EVERY SINGLE DAY to go to work.  And it will never look the same.

Our sweet, sweet friends from Atlanta have a game day house in The Downs, which was right in the damage path.  This is what it looked like yesterday.  It literally looks like someone picked the house up about 30 feet in the air and dropped it.  There is insulation EVERYWHERE inside, and half of the walls are falling in.  It's devastating.  We spent most of the afternoon helping them get their valuables out because, unfortunately, looting has become a problem at night.

This was my board when I got to school this morning.  I always, always change the date on my board and get ready for the next day before I leave in the afternoon...that way, if I walk in at the last minute, I can just get started teaching.  It almost made me cry just seeing that date on the board.

This was one of the many convoys I've seen over the past few days...these were cherry pickers, I'm guessing to get trees and power lines cleaned up.  There have also been power trucks, police cars, you name it...I've seen a convoy of it since Wednesday.

I cannot tell you how overwhelmed I am by the outpouring of love and support I've (and the rest of the city has) seen over the past two days.  It is just incredible.  I've had at least 8 (sorry, I'm trying to keep up with them) emails of people asking if they could donate items.  If you do still want to donate (whether you field it through me or not), the most needed items are baby products (diapers, formula, etc.), shoes, school supplies, backpacks, and books.  Bottled water is also needed, but we had a lot of donations of water at my school this morning, so I'm guessing everybody else is too.  I couldn't help but laugh a little, half of the cases of water at my school were LSU bottles, which I'm guessing were what they sell at their sporting events...not that we're not thankful for them, but just funny that they would end up here.  Ironic, huh? :)

I will never forget looking at Noah Wednesday morning and saying, "A lot of people are going to die today."  I was right.  As of right now, we're at 50 confirmed, there are about 500 missing, and I've heard a lot unidentified.  It is horrific here.  Noah is from South Mississippi and went through Katrina, but I never really got it until this.  Just when you see your hometown in shambles...it's devastating.

Again, thank you for ALL of your prayers, well wishes, and donations.  It is just amazing.  If you'd like more information on what you can do to help, click here.

Ways You Can Help

**I am trying my best to keep this updated, but I'm out helping a good bit and am not at my computer.  If you know of another way to help, please put it as a comment to this.  Also check the comments too if you're looking for something to do!**

I am constantly updating this list as I hear more you can do...

Locally

-First and foremost, STAY OFF THE ROADS IF YOU ARE NOT THERE TO HELP.  Noah just called and said that I359 is completely backed up all the way, I've heard McFarland is a parking lot.  There are a lot of sightseers out right now - if you are not directly volunteering, or are not emergency/disaster responders, STAY HOME.

-Two little girls in my class lost their homes.  If you would like to donate personally to them, they are size 6 or 7.  Anything would be appreciated, and I will make sure they get it.

-There will be a Volunteer Reception Center at St. Mathias Church at 2310 Skyland Blvd across from WalMart beginning at noon and ending at dark on April 27, 2011.  They will coordinate where you can go to help. Mayor Maddox came out this morning and said that volunteers might not be placed for 48 hours, but if you do want to volunteer, still go to Saint Mathias and at least ask.  DO NOT show up at a damage site to try to work!  The EMA is sending people to the appropriate places.

-Belk Activity Center is being used as a shelter and needs toys and clothes of all sizes.

-There will be a Mobile blood collection center at Northridge Fitness today...if you can give blood, help with that!  They will be there until 7pm.

-I have a friend that is helping in Forrest Lake right now...they are in need of saws, hammers, gloves, etc.  If you can make it there without crowding the roads, anything would help.

-Conserve water.  The water treatment plant was destroyed, and they are asking that everybody (especially people in east Tuscaloosa) conserve as much as possible.

-If you have a home that isn't destroyed and has power/water, take somebody in.  If you know of someone that needs assistance, please email me at leslieflambert@gmail.com and if I can't help, I'll find someone that can.

-I have a friend that teaches at University Place Elementary, which was completely destroyed.  They are asking for school supplies, backpacks, and clothes for elementary-aged children.  Once again, email me at the address above and I'll be glad to put you in touch or get the things together.

-***The best things to donate now are toiletries, school supplies, baby products (diapers, formula, etc.),  shoes (everybody's shoes blew off of fell off in this), books, and backpacks.  Clothes would be appreciated, but many of the shelters are getting a lot of clothes.***

Not Local

-Give blood.  Even if it doesn't directly make it to Tuscaloosa, it will help somewhere else in need.

-The American Red Cross is the best way to donate financially.  They are helping run the storm shelters here right now.  You can go to redcross.org for more information.

-If you have extra clothes and toys, the shelters here are in need.  I don't know a direct way you can ship them, but if you'll email me at leslieflambert@gmail.com and I'll give you my address...I'll be glad to find a place for the donations.

-Pray.  I don't want to mention a lot of the things I've found out this morning because it's just too much.  Just put it this way - the news coverage doesn't begin to do it justice.  The loss in this town right now is catastrophic, and I don't know how we're going to recover.  Please pray for safety, comfort, and peace.

-If you are in the central Alabama area, here is a link from al.com about ways you can help: http://blog.al.com/spotnews/2011/04/alabama_tornadoes_how_you_can.html

-This is one of the most comprehensive lists I've found...great source of information: http://legislativebarbie.blogspot.com/2011/04/tuscaloosa-tornado-relief-efforts.html

-If you're in central Alabama, you can also check this page for places to donate items: https://www.facebook.com/PrayfortheTornadoVictimsofApril2011

-A local church is collecting donations, just mark them as "tornado relief": http://www.fivepointsbaptist.com/

If there's anything else you know of that you would like me to post here, please leave a comment.

VERY Urgent Prayer Request

We need prayers so badly right now.  If you haven't heard, a major tornado came through our town about two hours ago.  Noah, my family, and I are fine, our area of town is fine, but Tuscaloosa is devastated.

We have a close friend with a house close to 15th street, and Noah needed to check on some clients, so we tried to go to the 15th street/Midtown area.  It is terrible.  It literally looks like a bulldozer went through it all.

I've never seen anything like that in my life.  I've mentioned before we had a pretty bad tornado come through in 2000...this isn't even on the same playing field.  A good half of this city is destroyed.

PLEASE pray.  Pray for my sweet babies at school, that I can't quit thinking about.  Pray that everybody finds shelter tonight.  Pray that UA parents can get in touch with their kids (our cell phone towers are jammed right now, especially near campus).

Top Ten Signs It's Tornado Season

Speaking from experience here...

1. You wake up to a call from your mother at 5am, and you know it's because of bad weather.

2. You get random days off in the middle of the week.

3. The color commentary on twitter about your local meteorologist is the most entertaining part of the day.

4. Words like shear, helicity, and mesoscale become common language.

5. You've become complacent with the sound of tornado sirens going off (sad, but true).

6. Dodging trees on the way out in the morning is pretty normal.

7.  You look at said trees and think, "Did that tree fall from this storm or the last storm?"

8. You know how to find a tornado on a radar.

9. Your house is missing parts...and/or your yard and flowerbed are constantly a mess.

10. Your radar looks like this...

Stay safe today southeastern people!

Happy Easter!

We had a really low-key Easter.  After dinner with some friends last night, we had Easter lunch with my family today, and have been lazy this afternoon!

I'm sure most of you have seen this by now, but for those who haven't, get ready to pick your jaw off the ground.  This couldn't have come out at a better time...

Happy Easter everybody!

Sketchball

Sorry if I'm a little MIA...it's been a busy week.  I'm ok, I guess...hasn't been the best week, if you know what I mean.  My 2011 baby dreams are done.

The good news is my incredible husband continues to be a rock star, I have 2 awesome jobs (when there are a lot of people that don't have one), and everything else is great.  Just the one thing I give up a lot of this for isn't happening.

...and that, my friends, is my pity party for this month.  Not allowed until next month.  Thanks, guys, for listening to my seemingly constant complaining. :)

Scary Afternoon

Most of you know (especially in the Southeast) that there have been really rough storms coming through in the past couple of days.  Well we got our share (and then some) this afternoon.

We got out of school early today - about 12:30 - because of the storms.  Thank GOD.  If we hadn't, both of the school systems in our area would have been running buses through the areas that were hit when they hit.  That is a HUGE praise!

So we're both at home around 3:30, and something that looked like a major tornado was coming through.  It scared me, because if you live in this area, you know that the tornadoes ALWAYS follow the same path.  They catch the interstate and/or river because they're clear paths.  But this one went a little bit west, and we let our guard down.

No more than 10 minutes later, another one came through.  There were no reports of a tornado on the ground when it came through, but it looked bad.

The next few minutes were kind of a blur.  I remember hearing neighborhoods around us mentioned on TV, so we got in the hall.  Next thing I know, they're reporting a tornado right about where my parents live and headed toward my father at work (they are both in the "path" that it always follows).

So obviously, I start crying like a little girl.

We knew we weren't threatened at our house, so we stepped outside.  This is what we saw.  Keep in mind, this is VERY raw footage, and you might or might not hear me sniffling in my previously discussed little girl state.

I called my mom right after, and she was really upset.  My brothers, in their genius mindsets, decided it was smart to go out in the storm.  She's home alone, and hears this thing go over her house (she described the "train" sound everybody does).  I called her right after, so she was still in shock, didn't know how much damage there was, and didn't know where my brothers were.

So I start freaking...again.  As soon as we could possibly get in the car before we got swept away, we did.  There are 4 ways to get to my parent's house...3 were blocked by downed trees.  After driving every other way, including the back way through another neighborhood, and dodging several trees, we got there.

It could have been so, so much worse.  Just some outside damage and down trees.  My brothers were fine - they got trapped on a road that had no outlet between downed trees.

Nobody was hurt, and things can be replaced - my husband specializes in helping with that replacement. :)

I forgot to add this in the original post.  This was one of the craziest things we saw.  We couldn't figure out where this dust had come from.  It was coming out of all of the walls in the house that backed up to the outside.  After a few minutes of brainstorming, we figured out that the pressure from the tornado was so high, it forced all of the sawdust (and just general dust from age) that was still in the walls from when the house was built out.  My parents' house was built 20 years ago.

It's amazing what these things can do.
We went to dinner tonight, and saw some more of the damage.

All in all, just a scary afternoon.  Way too familiar to this storm!  I'm just so thankful that everybody here is ok, and it was just THINGS that are hurt.

Fish in Parchment Paper

Tried yet another new recipe this weekend!

This was just to use up a few things I had around the house...and turned out great.  I had to share!

You need...

4 large squash
4 red potatoes
3 onions
1 cup butter (sounds like a lot, but it isn't all on the food!)
4 tbsp. olive oil
1 lb. fish (marinated in chili powder, jalapeno, garlic, olive oil, and salt/pepper)
parchment paper

First, take a piece of parchment paper and cover a baking sheet.  Coat with butter.

Take half of the squash, potatoes, and onion and cover the paper.  Top with half of the olive oil.  Season the veggies with salt/pepper.

Put the fish on top of that.  Top with the marinade.

Cover with the rest of the veggies.  Top with other half of the olive oil.

Coat another piece of parchment paper with butter and place on top.  Fold the sides in.

Bake at 350 degrees for 30-40 minutes.

Quick and easy!  We made some of the fish into fish tacos (just add some arugula, sour cream, and salsa).

Amazing Connection

I ran across this website tonight.  I wasn't even looking for it honestly; I had googled something entirely different, and it came up.

It's a website that compiles a list of many, many (MANY) different celebrities that have either been through pregnancy or child loss.  I just sat here with tears in my eyes thinking about all of these women (many of which you and I both have idolized our whole lives) that have been through the same thing I'm going through right now.  If I could talk to them, we'd have a connection that a lot of people don't get.

Some of the ones that really got me were Lucille Ball (multiple miscarriages), Princess Diana, and Vivien Leigh.  All women I have just loved me entire life, and even after the past year, I had absolutely no clue they had gone through this.  Just amazing.

But the best part of it?  Most of these women went on to have beautiful, perfect babies.  More uplifting than you know.

You can see the website here.  Just prepare though...for some reason, it was really emotional for me to scan through all of these women that understand what's happening to me right now.

Welcome to the World, Sweet Baby Girl!

I'm officially Aunt Leslie!

Avery Nicole Lambert came into the world at 6:48 (eastern time) tonight.  She was 7 lbs. 11 oz. (that's what I was when I was born - good size! :)), and was 21 inches long.  Mommy and baby are perfect.

I would give ANYTHING to be there...we live about 12 hours away (they are in Daytona, Florida), and with her being induced in the middle of a work week, there was just no way.  I'm going to see that sweet baby soon though, and I'm going to SPOIL HER ROTTEN!

Congratulations Heather and Heath!

Stormy Weather and Smush Face

It's been a stormy afternoon here.  We actually got out of school early because of it!  Now, don't get me wrong...this is NOT worth the extra hour you get.  I was calling parents like a crazy woman this afternoon.  I got NOTHING accomplished at school!  But we did get to leave about an hour early.

This is what it looked like at about 7:00 at my house tonight.  The worst part of it was that it knocked out Gone With The Wind on the satellite for about 30 minutes...tragic. :)

This man was loving having me home about an hour early today though.  He has been LAZY today...hence the smush face in the couch.  This is normal for him.  Sadly enough.

Not a bad Monday, if I do say so myself!

Weekend Recipes - Chicken Enchiladas and Spaghetti

I have been cooking ALL weekend...which is weird for us.  That's usually the time when we eat at restaurants (or at least do take-out), but we've been home-bodies this weekend!

I tried a new recipe yesterday.  It was one I found on allrecipes.com...but of course, I had to make it my own. :)

Chicken Enchiladas

You Need:
2 packs 6 inch flour tortillas
1 lb. chicken
2 tbsp. salt
2 tbsp. pepper
1 tbsp. garlic powder
1 tbsp. cayenne pepper
1 tbsp. red pepper flakes
1 tbsp. chili powder
1 cup chopped green pepper
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel
1 8oz. pack cream cheese (I used garden vegetable flavor, but regular would work too.)
2 cups Kraft Triple Cheddar with Philadelphia (Just regular cheddar would work if that's what you have.)

Directions:
In a large skillet, cook the chicken in a little bit of olive oil with half of the next 5 seasonings. Set aside.

In the same skillet,  add some more olive oil, and saute the green pepper until tender.  Add in the last half of the seasonings.  When the green pepper is cooked through, add the soups and Rotel, and turn the heat down to low.  Heat until warm.  Then, spoon in the cream cheese and stir until incorporated.

Set 2/3 of the sauce to the side.  Add back in the chicken to the 1/3 of the sauce left, and add half (1 cup) of the cheese.  Stir well.

(Yes, I am an incredibly messy cook.  That's why this man sits under me waiting for dropped food every. time. I. cook.)
Back to business.

Take the tortillas and spoon about this much...

(Don't hate on the make-shift tortilla stuffing board.)

...of the sauce into each one.  Roll up, and place in a greased 9x13 dish.  Put as many of these as you can in the dish.

Top with the remaining sauce.  Then, sprinkle remaining cheese on top.  Bake at 350 degrees for 30-35 minutes.

And this is what you get...delicious!  I served it with the Spanish rice I got a couple of weeks ago.

Turned out to be VERY good!  Noah told me it was a keeper recipe - and that means something.  He's the pickiest eater alive!

I also cooked tonight...we had spaghetti.  Not too much off of my normal spaghetti track, but I did add some new elements!

My Version of Spaghetti

You Need:
2 lbs. dry spaghetti
1 jar + 2 small cans tomato sauce
1 28z. jar diced tomatoes
1 tbsp. garlic
1 tbsp. garlic powder
1 tsp. cayenne pepper (you might want to skip this if you aren't into spicy foods)
1 tbsp. pepper
1 tbsp. salt
2 lbs. ground beef
1c green bell peppers, chopped
1 frozen box chopped spinach

Directions:  Get the spaghetti boiling.  I put in a little bit of olive oil and salt when boiling, then toss it in olive oil when finished.  Make sure you don't over-cook the noodles, or they'll be mushy...and nobody likes that.

Meanwhile, microwave the spinach to thaw.  In a large skillet, saute the green bell pepper in olive oil.  Add the ground beef and brown.  At the very end of browning, add the garlic, seasonings, and spinach and stir.  Drain the grease.

Add the tomato sauce and diced tomatoes (with juice) to the drained ground beef mixture.  Stir well, and let simmer for 30 minutes-1 hour.  Mix with noodles; serve with garlic bread.

Delicious...and a good way to get a veggie serving in!

Coupon Questions Answered!

Leisl asked: "What $5 off competitor coupon does Publix let you use?"

This varies from store to store.  My particular store has a Food World, Brunos, and Target nearby...so I get to use those competitor coupons.  But that's different for everybody.  The best thing to do is to call or drop by your customer service desk and ask.  Just know though...if you have to use a reward card at another store in order to use that coupon, you can't use it at Publix.  Just read the fine print of your coupon!

If you're somewhat local, this book is a great source for grocery coupons!  If you're not from Tuscaloosa, you can click on "buy a book" at the top to find your city and see if they have the coupons.  My school sold these for a fundraiser at the beginning of the school year, but you can buy them from this website too.  There was even a Groupon (it might have been Living Social, I can't remember) for these a few weeks ago, so be on the lookout!

Casey asked: "How do you know when the item is going on sale to know what coupons to order? How long does it take to receive the coupons? I'm new at the couponing thing and feel like it takes hours to find the deals and then match the coupons. How can I maximize my time? Help please."

The whole thing can be overwhelming at first, but don't let it overwhelm you!  Just start out slow.  You can go here to see how I do everything.  It's really easy if you just take it slow and build up.

I usually get the Publix ad from iheartpublix.com on the Monday before the sale starts.  That gives me plenty of time to order the coupons from those sites I mentioned a few days ago.   If you don't have a Publix, southernsavers.com has just about every other ad you could want.  If you want the other ads super early, slickdeals.net has a forum area that puts the ads up like Saturday or Sunday usually!  I don't always order coupons, just when I see something I would really use or that makes you money.  It takes about as long to receive the coupons as anything else you'd order online - usually 3 or 4 days.  That sometimes means I don't get to shop on the first day of the sale, but that's ok if the deal is good enough!

I normally spend about an hour a week organizing coupons and making my lists.  If it takes more than 2 or 3 hours a week, just try to cut back some...it can become consuming if you let it!  Don't let it take you over, it's just something fun to do to save a little money.  And like I said earlier...start slow.  If you try to jump in head first, you're going to get burned out and drop it.  Try to get a deal or two the first week, then add a couple more deals every week.

Stacey asked: "I live in a very small town and we dont have a Publix or CVS. I do my grocery/houshold needs at Wal Mart , Dollar General or Save a lot. All of thoses stores are in a near by town, in my local town we have just a locally owned grocery store that doesnt do coupons. What do you suggest so I get my best deals for a very small budget?"

This can make it tricky.  I've heard that Wal-Mart has just changed their policy to make it easier to use coupons.  That's probably the main reason I haven't been shopping at Wal-Mart...it used to be VERY difficult to use coupons there, as opposed to other stores.  But you might want to check this site: http://www.iheartthemart.com/.  They are supposed to be a great resource for couponing at Wal-Mart.

You can also find $5/25 coupons pretty regularly to Dollar General.  I'm not sure about their coupon policy, but just search for it on Google and you should be able to find it.  If they do accept coupons, look on Hot Coupon World and Southern Savers...they have great coupon databases.  So if you find something on sale, you can look on those sites to see if there is a coupon to match with it.  Yes, this is more complicated, but it is doable!

Keep the questions coming...I love helping people get better at this!  And don't forget to check out a few fun giveaways going right now:
