Lazy Sunday

We had one of those fabulous lazy, rainy Sundays where you lay in the bed all day and do absolutely nothing! I mean, how could you not be lazy when this is the view out of your window?



We spent a lot of the morning playing with Hardy. I think his favorite thing in the world might be wrestling with Noah. Doesn't he look happy?





After laying in the bed for most of the late morning/afternoon (don't judge)...




we got up and did grocery shopping. I told you earlier about my excessive cheapness when it comes to grocery shopping, so Publix's penny item is right up my alley! Every Sunday, if you spend $10, you can get one item for a penny at Publix. This week it was 1/2 a gallon of tea! I got peach tea...so good!

I also got the stuff to make Jambalaya Pasta. I have probably been making this since Noah and I started dating, and he still says it's his favorite recipe I make! I have a hubby from south Mississippi, so I have learned to cook things spicy. He likes his cajun cooking! Here's the recipe:

Jambalaya Pasta

1 lb. sausage
1 medium onion, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
3-4 cloves garlic, finely minced (or 1 tbsp. pre-minced garlic, like I use)
3/4 cup half and half
1 26oz. can crushed tomatoes
1 can original Rotel
2 lbs. pasta (any kind, but I prefer penne or rigatoni)
2 tsp. cayenne pepper
1 tbsp. Tony Chachere's seasoning or Emeril's Essence

Boil pasta in salted water until just soft. Drain and set aside.

In a large skillet, brown the sausage. Once browned, add the onion, pepper, and celery. Cook until veggies are soft. Add garlic and cook for 1-2 minutes, then drain the grease. Add crushed tomatoes and rotel. When warmed through, add half and half and seasonings (to taste), plus salt and pepper as desired.

Mix with the pasta, and serve immediately!

Like I said, this is a little spicy, so if you're not into that, cut down on the cayenne. This is a fairly inexpensive recipe, and is SO good! I usually serve it with cheddar and garlic biscuits (you can find the pre-bagged mix in the baking mixes section). Enjoy!
